I still have some old cast iron skillets and use them, but my Le Creuset Skillets are my pans of choice more often than not.  Why?  I like the fact that the enamel coating allows for the pans to be washed in soap and water. 

Non-enameled cast iron should only be rinsed with water and wiped out.  While this does tend to help the pan retain flavors, it also adds those flavors to the next thing you cook.  I don’t know about you but taco pancakes are not my favorite dish on a sunday morning.  That is why I love my Le Creuset Skillets.  I can wash them with soap and water  and still get all the benefits of cooking with cast iron.  They heat evenly and retain that heat for longer than other pans.  There are rarely hot spots and foods brown nicely.
